Quickie basic mashed potatoes
One night at about midnight on the dot I had a hankering desire for mashed potatoes. It was late and I didn’t feel like baking them or any of the slow methods. What to do what to do.. Microwave!
So I took three potatoes, rinsed them, and wrapped each one in a wet paper towel. Oh yeah, don’t forget to poke breathing holes in each one with a fork.
I microwaved them for about 8 or 9 minutes, until soft all the way through.
Then after they cooled down enough to handle, I peeled the skin off of each potato. (Running cold water over them speeds up the cooling process since this is supposed to be a quick fix recipe). EDIT: Just peel them before you cook ’em. Duh on my part.
With the skin peeled, I threw them all into a pan and mixed butter and milk in with them. About 3 tablespoons of butter and a half cup of milk.
Then grab your masher of choice and go at it. Mash them to your hearts content. Add salt to the final product and there you have it. A quick fix for the late night mashed potato craving.
