I was inspired buy one of my other favorite soups (French onion) when the epiphany hit me…
Why not put buttery garlic bread smothered with cheese on top of tomato soup? French onion soup has bread soaking in it with cheese all over it, so why not tomato soup? It’s a new spin on an old classic. I tried it and I loved it.
Preheat oven to 400 degrees. Pour in a can of the condensed tomato soup into a sauce pot.
Mix the tomato soup with another can of water. OR half water and half milk.
Chop up a couple of leaves of fresh basil. Always use fresh herbs when possible. I used to be a believer that dried herbs were just as good as fresh herbs. WRONG. Cooking with fresh herbs opened up new avenues of taste that I never knew existed.
Put the basil in the pot.
Season with salt and pepper. Crank up the heat to medium low and let it do its thing. Cook the tomato soup according to package directions.
Meanwhile.. prepare two cloves of garlic for dicing.
Take you knife and crush the garlic by shoving down on it like so. It helps the skin of the garlic to fall off.
Dice the garlic and enjoy the smell.
Cut two tablespoons of butter and soften for a couple of seconds in the microwave. It makes for easier mixing.
Combine the diced garlic and softened butter into a bowl.
Mix it together to create a compound butter of sorts.
Get two pieces of bread and spread your compound butter mixture on one side of each slice.
Then, toast the garlic butter bread in the preheated oven for 6-7 minutes or until toasty.
While the bread is toasting, portion out 1/2 cup of cheddar cheese and 1/4 cup of mozzarella cheese. Now mix them together.
When the bread is finished toasting, pour the cooked tomato soup into two bowls.
Take a slice to garlic butter toast and lay it on top of the tomato soup in the bowl. Let them get nice and cozy together.
Sprinkle the cheese mixture in equal amounts over the bread and soup. It looks delicious already. Stick each bowl in the microwave for a few seconds to melt the cheese.
Now grab a spoon and go sit down. Dig in and enjoy.
