Ham trimmings were added to create another layer of flavor that worked great in this dish. Its also a good way to use leftover Easter ham that you have no desire for.
The key to a great beef roast if to always get that sear in a sizzling hot skillet before slow roasting it. The juices will be locked in and a flavorful crust compliments the extra efforts it takes to accomplish this step.
The flavors of this roast are light and hearty which can be prepared with just 5 ingredients and is perfect to weed out the leftovers of a bare pantry. You can vary your ingredients by adding more vegetables if you like or additional garlic for robust flavor. I served this meal over rice, but potatoes, polenta, and anything of the imagination works too.
