This recipe was inspired from the 1-minute ham & egg recipe from Ellen Bales. The concept of putting together ingredients, then cracking an egg over the top and microwaving the whole thing made me curious to try my own adaptation. My version isn’t a 1-minute recipe, but its a hearty little pick-me-up in the morning for non breakfast people. I’m one of those people who has to be in the right mood to eat breakfast other than the morning ritual of coffee.
This breakfast bowl is a simple meat, potato, egg, and cheese throwback. For the meat I use kielbasa which is a nice deviation from the standard bacon or sausage. This recipe would be much faster if you had leftover potato to use. If not, par boil a couple of potatoes for 15 minutes then let them cool and peel them. Cut into bite sized portions to fry in olive oil.
The concept of this dish is assembling cooked ingredients in a bowl and dropping a raw egg on top. Hence why I called it an egg bomb. Then its microwaved until the egg is cooked or slightly less for a runny egg. I found 1 1/2 minutes in the microwave to be sufficient in accomplishing a cooked, yet somewhat runny yoke. I’m sure this time varies according to microwave.
- 1 egg
- 1 potato
- ⅓ cup kielbasa (chopped)
- 2 green onions (chopped)
- 1 clove garlic (diced)
- 1 tbsp of shredded cheddar cheese
- parsley for garnish (optional)
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Bring a pot of water to boil and par boil your potato for about 15 minutes and slightly tender. Skip this step if you already have cooked potato.
- Once the potato is done, peel and chop it into small cubes. Add vegetable oil to skillet over medium heat and fry potatoes for 3 minutes. Add the garlic, kielbasa, green onions, and salt & pepper. Fry for another 2 minutes until the potatoes are nice and browned.
- Put this pan mixture into a bowl, sprinkle with cheese, and crack a raw egg on top.
- Microwave for 1½ minutes for a runny egg. The time may vary according to microwave. Garnish with parsley or paprika.
