Are you in need of a comfort food? These would be it!
Amber came home with a bag of potatoes and told me that she wanted double baked potatoes for dinner. I said, heck yes! I mean who would say no to that?
After some deliberation about what kind of double baked potatoes to make, we decided that hamburger and broccoli mixed with sour cream, butter, and cheese would definitely hit the spot. And- oh- it- did.
Double baked potatoes are so versatile that really anything is game ingredient wise. Throw in everything plus the kitchen sink for comfort meal. Throw in some fresh herbs and olive oil for healthier approach. Its really up to you! I went for the comfort-filling factor if you couldn’t tell.
Totally off topic, but I’ve decided to try out Swoop. You food bloggers out there probably already know what it is since it seems to be swooooping the food blog world. It’s an advertising platform that puts a couple of ads in the recipe section of the post. Some ads might be for local coupons tailored to your area for ingredients listed while others are just product shout outs. I hope they aren’t too invasive and don’t take away from the food blog experience. I’m unsure if Swoop will be worth it in the end, but I’ll give it a try at least.

Now back to those double baked potatoes… well, I really don’t have much to say about potatoes so I guess I’ll leave it at that! Go enjoy these they are awesome! Comfort food baby!
Note: You may have extra filling in the end. Either use it for something else or *re-stuff a potato after eating and eat again.
- 6 large Russet potatoes
- 1 pound ground beef
- 1 cup frozen broccoli
- 3 green onions (minced)
- ¼ cup of milk
- ¼ cup of sour cream
- 4 tablespoons unsalted butter
- ½ tablespoon seasoned salt
- ¼ teaspoon pepper
- ½ cup sharp cheddar cheese (grated)
- Preheat oven to 400 degrees.
- Scrub and clean the potatoes. Rub them with vegetable oil and place on a baking sheet. Bake in the oven for 1 hour until they are tender.
- While the potatoes are baking, cook the hamburger and broccoli in a large skillet until the hamburger is browned. About 10 minutes. Set aside.
- When the potatoes are finished, turn down the oven to 325 degrees. Carefully, slice the top of the potatoes (long ways) and then spoon out tender potato inside into a mixing bowl. Leave enough potato for the walls to keep their shape. Set potato shells aside.
- In the mixing bowl, mash together the potatoes, seasoned salt, pepper, milk, and sour cream. Then stir in the beef, broccoli, and green onions. Mix well.
- Fill each potato shell generously with the filling and top with cheddar cheese.
- Place back on the baking sheet and bake for 10 more minutes. Enjoy!
