  • 1 egg
  • 1 potato
  • ⅓ cup kielbasa (chopped)
  • 2 green onions (chopped)
  • 1 clove garlic (diced)
  • 1 tbsp of shredded cheddar cheese
  • parsley for garnish (optional)
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  1. Bring a pot of water to boil and par boil your potato for about 15 minutes and slightly tender. Skip this step if you already have cooked potato.
  2. Once the potato is done, peel and chop it into small cubes. Add vegetable oil to skillet over medium heat and fry potatoes for 3 minutes. Add the garlic, kielbasa, green onions, and salt & pepper. Fry for another 2 minutes until the potatoes are nice and browned.
  3. Put this pan mixture into a bowl, sprinkle with cheese, and crack a raw egg on top.
  4. Microwave for 1½ minutes for a runny egg. The time may vary according to microwave. Garnish with parsley or paprika.
