Recipe type: Main
Cuisine: American
Serves: 4
  • 6 large Russet potatoes
  • 1 pound ground beef
  • 1 cup frozen broccoli
  • 3 green onions (minced)
  • ¼ cup of milk
  • ¼ cup of sour cream
  • 4 tablespoons unsalted butter
  • ½ tablespoon seasoned salt
  • ¼ teaspoon pepper
  • ½ cup sharp cheddar cheese (grated)
  1. Preheat oven to 400 degrees.
  2. Scrub and clean the potatoes. Rub them with vegetable oil and place on a baking sheet. Bake in the oven for 1 hour until they are tender.
  3. While the potatoes are baking, cook the hamburger and broccoli in a large skillet until the hamburger is browned. About 10 minutes. Set aside.
  4. When the potatoes are finished, turn down the oven to 325 degrees. Carefully, slice the top of the potatoes (long ways) and then spoon out tender potato inside into a mixing bowl. Leave enough potato for the walls to keep their shape. Set potato shells aside.
  5. In the mixing bowl, mash together the potatoes, seasoned salt, pepper, milk, and sour cream. Then stir in the beef, broccoli, and green onions. Mix well.
  6. Fill each potato shell generously with the filling and top with cheddar cheese.
  7. Place back on the baking sheet and bake for 10 more minutes. Enjoy!
