Grilled lamb chops with herbs and lime are great as an appetizer or main course.

  • 12-16 lamb chops
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 3 cloves garlic chopped
  • 2 limes zested and juiced
  • ¼ cup olive oil
  • red pepper flakes
  • Salt and pepper to taste
  1. To prepare the marinade, zest and juice two limes in a resealable plastic bag. Chop up three cloves of garlic, two sprigs of rosemary, and two 4 sprigs of thyme. Mix the herbs and garlic with the lime juice. Add in some red pepper flakes for heat and about ¼ cup of olive oil. Add 12-16 lamb chops to the mixture and marinate for 3 hours.
  2. Once complete, remove the lamb chops from the marinade. Heat a grill to medium high heat and grill the lamb for 4 minutes per side for medium rare. Salt and pepper each side to taste. Enjoy!
