Tomato and orzo salad

  • ½ cup of orzo pasta
  • 1 cup of cherry tomatoes
  • ½ cup of feta cheese
  • ½ cup of good olive oil
  • 1 handful of sweet basil torn
  • ½ tablespoon kosher salt
  • Freshly ground back pepper
  1. Bring water to a boil, add salt, then about a half cup of orzo. Cook according to package directions.
  2. Drain the orzo and pour pasta in a serving dish. Meanwhile, slice about a cup of cherry tomatoes in half. Dice up a half cup of block feta cheese or pre crumbled feta. Add in the tomatoes and feta on top of the orzo.
  3. Tear up a handful of sweat basil leaves and add them to the salad. Then pour a half cup or so of very good extra virgin olive oil over everything. Add a generous amount of kosher salt and freshly ground black pepper. Toss before serving and enjoy!
