4 Cod Fillets
1 bunch Asparagus
4 Lemon Slices
1 tbsp Capers
1/2 cup Cherry Tomatoes
Salt & Pepper
2 tbsp Extra Virgin Olive Oil

Baked cod with asparagus & cherry tomatoes

A quick and healthy fish dinner that packs a huge flavor punch

Preheat oven to 375 degrees.

Coat a baking sheet with 1 tbsp of extra virgin olive oil. Trim asparagus and place on the baking sheet. Layer the cod fillets on top of the asparagus then place lemon slices. Cut in half lengthwise 1/2 cup of cherry tomatoes and sprinkle over baking sheet along with the capers.

Bake for 15 minutes.

Squeeze some of the lemon juice over the cod fillets and enjoy!
