Ingredients

Adjust Servings:
1 3 pound pack of Babyback pork ribs
4 tbsp Parsley
2 tbsp Mint
2 tbsp Lavender
6 tbsp Extra Virgin Olive Oil
1 Cup Sweet Red Wine
1 12 ounce Can Diced Tomatoes
1/2 Red Onion chopped
To Taste Salt & Pepper

Braised ribs in tomato wine sauce

This is one of my favorite ways to cook ribs rather than the tradition BBQ style. They are tender and delicious. Serve other micro greens, mashed potatoes, or polenta.

Chop the parsley, mint, and lavender and place in a mortar and pestle bowl. Add 3 tbsp of olive oil and mash herbs into a paste.

Cut the rack of ribs in half and rub the herb paste all over the meaty side. Salt and pepper the rack liberally.

Heat 2 tbsp of olive oil in a high sided pot. Place one half rack at a time meat side down into pan and sear until a crust has formed about 6 minutes.

Once both half racks have been seared, cut rib racks into individual ribs.

Place individual ribs back into pot. Chopped a half of a red onion and place into the pot. Pour over the diced tomatoes and wine then mix well. Cover and cook for about 1 hour stirring occasionally. Remove lid the last 20 minutes to thicken sauce.

Plate ribs over micro greens, mashed potatoes, or polenta. Enjoy!
