My first time making gnocchi was definitely a learning experience that also made for a long evening in the kitchen. If you’ve never had gnocchi before, its basically a potato pasta type dish that’s creamy, tender, and quite filling. By the way, look up how to pronounce gnocchi if you’ve never heard of it before.

Making gnocchi can be labor intensive so if you have any willing kitchen help hanging around definitely utilize their hands. I would suggest that for the first time trying it, go to the store and buy pre made gnocchi so you can get an idea of what it tastes like. If you are making it homemade, take a look at this video tutorial on making and rolling gnocchi. There’s some technique involved and it’ll take practice. I’ll add a tutorial once I’ve mastered the art of it.

gnocchi lemon thyme

A hearty sauce works best in my opinion for a gnocchi dish. You can add chicken, veggies, or whatever you like to make it a satisfying dinner. Leave it by itself and you’ll have a hearty appetizer.

I used a creamy lemon-thyme based sauce to flavor this dish. I wanted to make it as creamy as possible so that the sauce would stick to my gnocchi and every bite had an aggressive lemon thyme flavor.

Homemade gnocchi with creamy lemon-thyme sauce

Ingredients
  • 2 cups of gnocchi
  • 1/2 cup of green onions (chopped)
  • 4 tablespoons of butter
  • 1/3 cup of whipping cream
  • 1 1/2 tablespoons of lemon zest
  • Juice of half of a lemon
  • 1 tablespoon of fresh thyme (chopped)
  • 1/3 cup of grated Parmesan cheese
  • Salt and pepper to taste
Instructions
  1. Prepare the gnocchi according to package instructions for store bought or if using homemade, boil for 2 minutes until floating. Remove and dry the gnocchi.
  2. Melt butter in a skillet. Add lemon zest, lemon juice, and thyme. Cook for a couple of minutes taking care not to scald the butter.
  3. Add in the green onion and whipping cream. Cook stirring often until the sauce has reduced some. About 6 minutes.
  4. Stir in the Parmesan cheese and gnocchi. Salt and pepper for seasoning. Cook for an additional minute and serve immediately.
