Lemon cilantro shrimp




Summer is nearly over, but it doesn’t have to limit my cooking. It’s fun to throw in a summer-tropical dish during the cold months to spice things up. I had a large amount of fresh shrimp and I made two dishes opposite on the culture spectrum. Lemon cilantro shrimp is one of those two and is about as tropical as it gets. The bold flavors involved work together to create a culinary party- and everyone is invited! This recipe is a perfect appetizer to remind you of a sunny tropical beach.

  • 1 pound large shrimp
  • 1/2 cup cilantro chopped
  • 2 lemons juiced
  • 3 cloves garlic diced
  • 1 jalapeno diced
  • 1 teaspoon salt
  • 1/2 tablespoon pepper
  • 2 tablespoons olive oil
  1. Mix together the shrimp, lemon juice, cilantro, garlic, salt, and pepper in a plastic bag.
  2. Let marinade for 30 minutes.
  3. In a skillet, heat up the olive oil and cook the diced jalapeno and shrimp 2 minutes per side.
  4. Serve and drizzle the pan drippings over the shrimp.
  5. Enjoy!
