Making a salad dressing is quite simple really, the first step is to have an idea of what kind of dressing you want to make. Ranch? Italian? Caesar? Chipotle?
I figured a chipotle dressing would pair perfectly with some leftover smoked pork loin that I had on hand. I mean chipotle and pork has to be good together, right? The only tool needed for salad dressings is a food processor or blender. You simply toss all of your ingredients in and pulse until you’ve reached your desire consistency. I started with a mayonnaise base and added a single bold chile pepper that was marinated in adobo sauce. You can find this pepper in the Spanish section of your mid-sized grocery store. Its the pepper that Bobby Flay uses liberally and packs an impressive flavor punch.
I added onion, garlic, and some lemon juice into the mix. Oh, don’t forget the oil! This is an oil and mayonnaise based recipe with slightly more mayonnaise than oil.
