I’ve been thinking about a mango habanero shrimp recipe for over a week now. Its one of those sudden cravings that happen when you have a mango laying around with nothing to do with it and the beautiful summer weather facilitates a tropical-like mood. Mango-habanero shrimp was a no brainer. This salsa can be used in multiple dishes including fish, chicken, tacos, or simply a dip for tortilla chips. I chickened out and only used half of a habanero pepper. If you like heat then add the whole pepper. The version I made just had a hint of heat.

Start with finely dicing 1/8 of a cup of red onion, 1/8 of a cup of chopped cilantro, and 1 tbsp of lime juice.

Then add into your bowl 1 peeled and chopped mango. I tried to chop the mango into smaller chucks to make for a smooth salsa. Then finely dice 1/8 of a cup of red bell pepper.

Now its time to add the heat. Use gloves when handling habanero peppers so you don’t “pepper spray” yourself. Funny story, it took me 3 days to get my hands on some gloves. I ended up going to the local doughnut shop and asking them for a pair of gloves… and also a maple cream filled delicious doughnut. Dice 1/2 of a habanero pepper very finely. Add the whole pepper if you enjoy heat. Also chop up 1 green onion (green part only).

Finally add 1/2 tsp of Kosher salt and 1/4 tsp of pepper. Mix it all up and you get this:

Use this salsa for whatever you like! Its sweet and slightly tangy with some heat. I used it for shrimp. Peel and de-vein 15 medium shrimp. Pat dry with a towel. Heat 1 tbsp of olive oil in a pan, salt and pepper the shrimp and saute then on each side for 2 minutes. I added a plash of lime juice to the shrimp.

Once the shrimp are cooked toss with your mango-habanero salsa. Its tropical, spicy, and delicious! Serve with a lime wedge.
