Its safe to say that this isn’t an authentic Thai dish, but its a sweet and savory twist on your average shrimp dinner. My goal was to add a subtle Asian flair, while staying true to the peanut flavor which I happened to be craving at the moment. I added mixed vegetables and scallions into the dish for additional texture and flavor.
The peanut butter, milk, water, and chili sauce need stirring constantly to prevent scalding. If the peanut sauce seems too thick, add more water.
Serve the Thai peanut shrimp over white rice or even better, noodles. You can adjust the spiciness by adding more red pepper flakes or adjust the sweetness by adding more water over milk.
Green onions, aka scallions, make a fine addition sprinkled over this dish.
